Chicken with Dijon Sauce
(This recipe makes enough sauce for about 5-6 chicken breasts.)
1 cup chicken broth
1 cup milk
2 Tbsp dijon mustard
Lemon juice and pepper mixed (or lemon pepper seasoning)
Rub oil on chicken breasts and coat with lemon/pepper mixture and warm in frying pan until brown (about 4 minutes a side). Take out chicken breasts and set aside while you add the broth into the pan. Then add in milk and mustard... simmer for a few minutes until thick-ish. Add chicken back in and simmer for a few more minutes. This recipe was originally intended for pork chops so if your family eats pork chops, I suppose you could use this recipe for them if you wanted.

Basketball Season Thoughts...
The bruises on my knees are gone and my basketball shoes haven't been on my feet in like four whole days!! The 2010-11 season of basketball has come to a close, and it is sad. :'( It was a really amazing season and I learned so much in so many ways!
This season we ended up with 10 girls on our team. 6 of us had come back from last year, and we had 4 new girls. It is always so awesome being a part of a team and getting to know your team-mates, old and new. I am always very blessed by my team-mates and they encourage me so much. I really try and do the same for them too... being a part of a team is so special. I have some really amazing girls as team-mates!!
I really learn a TON through basketball... a lot through this past off-season when Liberty and I were working on basketball a lot and a lot through the actual season. Not only did I learn sooo many things about basketball and shooting and fouls and dribbling and rebounding and defense and being point guard and all that kind of stuff... I learn a bunch about life through basketball because basketball is a lot like life in a lot of ways.
The season was kind of non-typical since one of our girls got really injured in the first game and was sort of recovering all season. Another had surgery and missed a ton. Others had other stuff going on and missed some games. So it was kind of hard not really ever having the entire team there... but it was all good and we kind of all learned to be a little flexible. :)
It is so beautiful watching people (and yourself) improve!!! I loved seeing some of the girls get so much better at different things, and seeing myself get better at different things! And it is encouraging to know that as you keep working at something, you will get better. I am thoroughly amazed at what people can accomplish with hard work!
YAY for patient coaches and team-mates!!!!! I had to put this on here because I think I would get annoyed if I were coaching me beings that it sometimes takes me forever to get stuff!
So even though the season is technically over, basketball season really never ends. ;-) The non-season months you get to play basketball and work hard on improving... you just don't get team practices and games. :-) The off-season is a good thing though! And next season will come super fast! We have our banquet this weekend so that will be exciting too!

Friday Foods
This Friday I am posting two things that go well together for a meal... I serve them and a salad and sometimes rice and it's a full meal. :)
Chicken with Peanut Sauce
4-6 Chicken Breasts (or however many needed to feed your fam)
1/2 c. peanut butter
1/2 c. liquid aminos or soy sauce
2-4 cloves of garlic (pressed)
1/4 c. honey
2 Tbsp. Rice vinegar
2 Tbsp. Sesame oil
1 Tbsp. Fresh ginger (chopped)
Mix all ingredients (except chicken) in a food processor or blender. It should make about 2 cups of sauce. Spread sauce over chicken breasts and bake at 350 until chicken cooks through OR cook on the grill.

Cook pasta according to package directions. Drain and rinse in cold water until noodles cool down. Mix together sauce in blender or food processor. (If you made the chicken, this is the same sauce so you can just double it and then just use half for the chicken and half for the pasta) Toss pasta with sauce.

This is one of my favorite meals. :) And most everyone in my family likes it a lot too. It is Hayden's favorite.

Crutches and Cars
As you all know, Hayden has been on crutches the past three weeks and has been getting quite a bit of help because of it. :) Over the past few days I have been staying off my ankle which I sprained in Thursday's game and so I took a turn on crutches. But now I am walking on the ankle again which is a big YAY. Now through this experience I have learned the following:
-It is really exhausting to go up the stairs and trying to coordinate yourself!
-You CAN do dishes even on crutches. My brother hasn't so much as put his plate on the counter since his surgery and we just figured it was too hard to do dishes on crutches. I have proved him wrong and it is totally possible to do dishes on crutches! He lost his credibility as far as I'm concerned, but my Mom still has sympathy for him. Lol.
-Ice is cold. (Ya that one seems obvious but I didn't really realize just how cold ice can get on one foot... the other foot is all happy and warm but the iced one is frrrreezing!)
I haven't driven in a few days since it's my right ankle... hopefully I won't have forgotten all the stuff to do when you drive :D I think my siblings have been sort of glad that I haven't driven lately... and my Mom's blood pressure has also gotten significantly lower this past weekend. Just kidding. :) But reversing the car up the driveway is the most scary part of the trip. See, one thing about our driveway is that it is like vertical practically and so you gotta give the car a lot of gas to get it up the driveway. And, um, I gave it a little too much gas and keep about *this close* to hitting our garage door. Oops. Thankfully I was driving with my Dad who doesn't get too concerned so there was no scream. :) Oh well.
Yay for basketball practice today... the season is almost over and when it gets over it will be the saddest thing that has happened since last season ended! :'(

In which I will ramble about recent family happenings...
First I have to post the beautifulness of my sister doing dishes on TWO DIFFERENT OCCASIONS... meaning that this dish-doing thing is becoming routine for her!! I've had her do dishes before, but now that this is a routine thing, I am quite excited.
I've also recruited my other sister, Holly, to help me make food recently. I love that I can get her to do things that I am not a fan of - like peeling potatoes or washing lettuce or whatever. :) She also helps my Mom when she cooks. Holly is adorable when she plays "cooking show". So, we'll be in the kitchen and I will put her in charge of something, and she will proceed to pretend like she in on a cooking show and explain every step of the recipe. It is ADORABLE. My Mom and I are grateful for help in the kitchen!
Hope's dish-doing and Holly's cooking reminds me of how my siblings are growing more and more. Holly's birthday in three weeks and I can hardly believe it! It's fun to see them growing up, and it reminds me that I need to start teaching them basketball. :)
Hayden had a surgery on his hamstring and has been on crutches over the past few weeks. Basically the afternoon after he came home goes like this: sit in chair and watch a movie, eat food, homework, eat food, movie, more food, sleep. I feel bad for him since he is in pain and is having to sit out the Spring sport season (he wanted to play lacrosse)... but it is good to know he is his usual self, asking me or my Mom for food every hour! Haha! But since he is on crutches, not only can he not walk, but he can't carry anything. So that is interesting too. But he has gotten way more independent throughout the weeks and can do a lot more on his own now.
My sisters and I like to have competitions on his crutches to see who can catapult them self the furthest. Hehe. It's pretty fun but then I fell off one time a little harder than I wanted to so I decided to stop doing that so I wouldn't hurt myself for basketball. :)
On a side note, my brother and sisters and I are in a play/musical that is happening in May. The girls are singing and each have like two lines each. Hayden has one of the main roles and has a TON of lines! I have a supporting role and have like 20 lines. Thankfully I declined singing a solo, so it's all good. ;) It is interesting coordinating 35 elementary aged kids... I am impressed by what the lady who leads the group can get those kids to do with singing and memorizing and stuff.
Today we have our first tournament basketball game... so I am off to make my oat-meal. :-D

Mexican Crock Pot Recipe
Mexican Crock-pot Thing (I hate the word "casserole" for some reason... so I am calling it Mexican Crock-pot THING rather than Mexican Crock-pot CASSEROLE.)
1 pound ground beef/turkey OR 3 breasts of shredded chicken
1 onion
2 small cans ranch-style beans
1 large can diced tomatoes
1/2 of a green pepper, chopped
1 tsp. chili powder or taco seasoning (optional... if your family is not keen on spicy stuff! I used 1/2 tsp.)
1/2 tsp. salt
1/2 tsp. pepper
3 cups of shredded cheese (this month we have cheddar, so I used that. But it calls for monterey jack...)
8 tortillas (we have whole-grain, sprouted-wheat type which worked great. But I am sure you could use flour or corn tortillas if you wanted.)
(It also calls for a bunch of cilantro and 1/2 tsp of cumin... we did not have either so I didn't use them.)
-Cook the beef with the onion and drain, or shred the chicken. Stir together all ingredients except for tortillas and cheese.
-Grease your crock-pot. Layer two of the tortillas at the bottom. They will probably overlap.
-Then put 1/4 of the vegetable/bean/seasoning mixture on top of the tortillas. Then add 1/4 of the cheese.
-Put two more tortillas on top and add another 1/4 of mixture, then another 1/4 of cheese. Continue the layers until you're out of mixture and tortillas. (You should have 4 layers...)
-Cook on low for 2ish hours. Or cook on high for 1ish hours. (It's all cooked so basically you are just heating it through.)
-Serve with a salad... Or chips and salsa! It's a meal!
-This makes about 8-10 servings depending on the ages of the people eating it :-D
Family rating: Little girls liked it a lot. Everyone else liked it.

My Year of Books
I am a pretty big reader and enjoy reading so much... so I thought I would share a peak into some of the books I've read over this year!
Safely Home by Randy Alcorn
This book really tugged on my heart for persecuted Christians... as this story follows a Christian in China. I had never read Randy Alcorn's books before but I will definitely be reading more of them!
The Penny Parcel by Avery Hitch
I re-read this book for the second or third time because I believe it is one of the best books I have ever read. It's about a young orphan girl and her story. It is highly intense and really captured me as I was reading. An amazing story of hope and healing! Not recommended for the emotionally unstable ;-)
Crazy Love by Francis Chan
I was given this book and read it in two hours. The author is truly impassioned about the topic of his writing... the amazing love of an awesome God. This book was inspiring!
Sherlock Holmes by Sir Arthur Doyle
I wish I was observant as Sherlock Holmes is. The end.
Princess of the Midnight Ball by Jessica Day George
Ok so I am NOT into fantasy/girlie/romantic type books, but I was impressed by this one. It was very clever and I thoroughly enjoyed it... I do believe it was my first trip to the "fantasy" portion of the library!
Too Small to Ignore by Wess Stafford
If you want to read a book that will make you want to get off the couch and change the world, then go pick this one up! I spoke to my heart and is one of my favorites!
Uncle Tom's Cabin by Harriet Beacher Stowe
This is one of THE most controversial books written, in my opinion. I definitely did not agree with everything she had to say, but I thought Stowe was a really good writer.
The Chronicles of Narnia by C.S. Lewis
Another re-read. Maybe the third or fourth time. Love these books!
Between Sundays by Karen Kingsbury
I loved this book about a football player who learned that life is most important off the field and how to reach out to those hurting right around him.
I like to read to learn things... so I have also read numerous books this year on nutrition, adoption, the Bible, sports, college, personal growth, cooking, kids, organizing, and the list goes on and on and on.
The top three books I did NOT like... Beowulf, The Scarlet Letter, Fahrenheit 451.
So that is a good chunk of stuff I have read this year!
