Mexican Crock-pot Thing (I hate the word "casserole" for some reason... so I am calling it Mexican Crock-pot THING rather than Mexican Crock-pot CASSEROLE.)
1 pound ground beef/turkey OR 3 breasts of shredded chicken
1 onion
2 small cans ranch-style beans
1 large can diced tomatoes
1/2 of a green pepper, chopped
1 tsp. chili powder or taco seasoning (optional... if your family is not keen on spicy stuff! I used 1/2 tsp.)
1/2 tsp. salt
1/2 tsp. pepper
3 cups of shredded cheese (this month we have cheddar, so I used that. But it calls for monterey jack...)
8 tortillas (we have whole-grain, sprouted-wheat type which worked great. But I am sure you could use flour or corn tortillas if you wanted.)
(It also calls for a bunch of cilantro and 1/2 tsp of cumin... we did not have either so I didn't use them.)
-Cook the beef with the onion and drain, or shred the chicken. Stir together all ingredients except for tortillas and cheese.
-Grease your crock-pot. Layer two of the tortillas at the bottom. They will probably overlap.
-Then put 1/4 of the vegetable/bean/seasoning mixture on top of the tortillas. Then add 1/4 of the cheese.
-Put two more tortillas on top and add another 1/4 of mixture, then another 1/4 of cheese. Continue the layers until you're out of mixture and tortillas. (You should have 4 layers...)
-Cook on low for 2ish hours. Or cook on high for 1ish hours. (It's all cooked so basically you are just heating it through.)
-Serve with a salad... Or chips and salsa! It's a meal!
-This makes about 8-10 servings depending on the ages of the people eating it :-D
Family rating: Little girls liked it a lot. Everyone else liked it.
